Everyone loves meatloaf, and this dish is a quick and easy offering with a decidedly Italian appeal with the addition of Cosmo Celebration Sauce, shredded mozzarella and provolone cheeses and classic herbs. It’s great for dinner and for sandwiches at lunch the next day with leftovers – if there are any!


2 pounds ground beef
4 eggs
1 cup Cosmo Celebration Classic Marinara Sauce, divided
1-1/2 cups breadcrumbs
2 ounces mozzarella cheese, shredded (1/2 cup)
2 ounces provolone cheese, shredded (1/2 cup)
1⁄2 cup chopped white onion
1⁄4 cup chopped green bell pepper
1⁄4 cup chopped yellow bell pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1⁄4 teaspoon freshly ground black pepper
1⁄8 teaspoon salt
1/8 teaspoon crushed red pepper flakes

Preheat oven to 325°F.

Combine the beef, eggs, 3/4 cup of the Cosmo Celebration Sauce, breadcrumbs, cheese, onions, bell peppers, oregano, thyme, black pepper, salt and red pepper thoroughly in a large bowl.

Transfer the mixture to a 9-inch loaf pan and bake at 325o F for 65 to 75 minutes or until the center reaches 145o F. Spoon on the remaining 1/4 cup of the Cosmo Celebration Sauce and return to the oven for 5 minutes. Let rest for 10 to 15 minutes before serving.
